recipe for 2 or 6 muffins
- 3 ripe bananas, roasted & smashed
- 1 tbs honey
- 1 tbs cinnamon
- 1 cup coconut milk
- 3 rooibos vanilla tea bags
- 2 tbs coconut or canola oil
- 2 cups old fashioned oats
- 1 1/2 cups white whole wheat flour
- 1/2 cup brown sugar
- 2 tbs coconut flakes
- 2 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp ground ginger, chopped
- 1 tsp vanilla extract
- 1 egg
how to do
- preheat the oven
- put parchement paper on a bakery sheet
- peel the bananas und put them onto the sheets, sizzle with the honey & 1 ts cinnamon
- bake about 20 min
- meanwhile add the coconut milk & the tea bags into a pot, heat by medium heat
- let it simmer for about 10 min & add the oil
- meanwhile add the egg & vanilla essence in a medium bowl
- add the milk mix into the egg & vanilla mix
- add in another bowl the oat, flour, baking powder, soda, sugar, coconut flakes, salt, cinnamon & ginger
- pour the milk-egg-vanilla mix into the oat mix & whisk
- put some cupcakes wrapper into the muffin tin & add the dough into them
- preheat the oven to 180 degree, put the muffin tin into the oven & bake the muffins for about 20 min
- allow the muffins to cool out
- otional: drizzel with melted chocolate & some coconut flakes
