Fish without chips & Tortillas with Caribbean fruit salad

Summer was calling today almost 20 degree; this is my kitchen’s answer 🙂

 

recipe for 2

  • 4 tortillas
  • 4 fish filets, let it marinate for about 30 min.

 

for the marinade & to cook the fish in

  • 1/4 cup olive oil
  • 1/2 red onion
  • 3 garlic gloves
  • sea salt & black pepper
  • 1/2 ts paprica powder

 

for the salsa

  • 1 grapefruit, peeled, remove partitions, cubed
  • 1 blood orange, peeled, emove partitions, cubed
  • 1 avocado, peeled, remove the pit, cubed
  • 1 mango, peeled, cubed
  • 1 red chili, chopped
  • 1/2 cup cilantro leaves, chopped if you like
  • sea salt & black pepper

 

for the chipotle crème & feta

  • 100g cream cheese
  • 1 tbs mayonnaise
  • 2-6 chipotle (available in vinegar), chopped
  • 1/2 ts mild adobo paprica powder
  • sea salt & black pepper
  • 100 g feta, cubed

 

how to do

  • preheat the oven by 180 degree Celsius top heat
  • mix the ingredients of the marinade in a blender, add the fish in
  • mix the salsa & cool it in the fridge till all the other things are ready
  • mix the  chipotle ingredients
  • put the tortillas on the grill of the oven
  • add the fish & the marinade into a skillet and cook it by medium heat & thereby let the marinade reduce for about 10-15 mins
  • add the tortillas on the grillage; pay attention to let them not burn
  • arrange the the fish on the tortillas, add the salsa, the cream & the feta on the top & decorate with some cilantro leaves

 

smell, taste & go for the show…
