recipe for 1 cake ∅ 24 cm
- 40 g almonds, shaved
- 240 g almonds, ground
- 2 tbs coconut flakes
- 3 apples, peeled, pitted, chopped
- zest & juice of 1 organic lemon
- 225 g castor sugar
- 6 eggs, size L, room temperature
- 1 ts vanilla extract
- 1 ts baking powder
- icing sugar for decoration
how to do
- preheat the oven to 160 degree C
- heat the apple cubes with the lemon juice & zest in a small covered saucepan for about 15 min by low temperature
- meanwhile beat the eggs with the sugar till it’s creamy
- add apples, almonds, vanilla extract, baking powder, coconut flakes
- whisk it all together
- line the base of the baking mould with a baking sheet
- add the dough into the mould & the mould onto the mean griddle into the oven
- bake about 45 minutes
- leave in the mould to cool down, then remove
- decorate with some icing sugar if you like
