Recycling in der Küche, oder wie ich die herbstlichsten Arme Ritter-Apfel-Kokosnuss Muffins ever schuf
recipe for 6 muffins:
- 200 ml coconut milk
- 1 ts cinnamon
- 1 tb brown sugar
- 1 tb whisky
- 30 ml Vanilla extract
- 3 eggs
- 1 apple, cut into small cubes
- 10-15 cm of a sweet (cinnamon) bread, cut into cubes
- 1 tb flour
- 1 tb brown sugar
- 1 tb coconut fakes
- 1 tb cold butter
how to do:
- mix the eggs, milk, cinnamon, sugar, whisky together
- grease the muffin form
- fill in one layer bread cubes, another layer apple cubes, a last layer bread cubes
- drain the mixture carefully with the egg milk
- now my favorite part, use your fingers to press carefully the mass into the form, so all bread/apples cubes will get milky
- put the muffin form into your fridge for about 2 hours
- after 1 3/4 h heat the oven to 180 degree C
- mix the butter, the flour, the coconut flakes, the sugar with your fingers to get crumbles
- throw them on the top of your muffins
- put them into the oven for about 20-25 min
- arrange them on a plate, pour some maple syrup on the top
